What I Eat When Trying To Be A Productive Vegan

First video of the year! Besides 3 simple and tasty vegan food ideas I also filmed what I did on that particular day. In 2019 I’m trying to become a more organized and productive human – emphasis on trying lol.

#1 Soft Bean Cashew and Bulgur ‘Tacos’

1 onion
1-2 tsp oil (or water)
½ can chickpeas (120g)
½ can of black beans (120g)
a handful of cashews
1 cup marinara sauce (250ml)
2-3 handfuls of fresh baby spinach

4 smaller sized tortillas
½ cup bulgur, dry (70g)
1-2 tomatoes, cut into slices

→ serves 2

#2 Potato, Spinach and Rice Noodle Soup

(i eyeballed most of these ingredients)

1 onion, roughly cut
4-5 small yellow potatoes (peeled if needed, cut in half to save time cooking)
2 cups veggie broth (500ml) (more if needed)
100g rice noodles (3.52 oz) (more or less)
2-3 handfuls of baby spinach
2 handfuls of cremini mushrooms
2 tsp oil
seasoned salt to taste
→ season each bowl to taste with nutritional yeast, lemon juice, dried herbs, soy sauce, hummus etc. (!)
