What I Ate this Week! (vegan university student)

Hi everyone! Here’s everything I ate during my first of university. Meaning there’s lots of super simple, quick and easy to recreate vegan meals in this one. My favorite rice noodle curry bowl, banana breakfast cookies, one of the best vegan pizzas I’ve ever had and more!

INGREDIENTS

#1 Apple Cinnamon Overnight Oats

*I eyeballed these ingredients

½ cup small cut oats (45g)
pinch of salt
¼ tsp cinnamon
1 tsp hemp powder
2 tsp flax seeds

⅓ cup vegan yogurt (80ml)
⅓ cup apple sauce (80ml)
nut butter
frozen berries

*serves 1 

#2 Breakfast Cookies

1 ripe banana
1 tsp chia, flax seeds
a pinch of salt
1 tbsp nut butter
½ cup small cut oats (45g)

*serves 1 

#3 Carrot and Rice Noodle Curry Bowl 

Curry Mix:
1 red bell pepper
1 onion
2 cloves garlic
juice of 1 lemon
2 tsp agave
1 tsp curry powder (or use curry paste)
salt, pepper, paprika to taste
hot sauce to taste

1 tbsp vegetable oil
1 can coconut milk
1 tsp cornstarch + 2 tbsp water
fresh herbs

2-3 long carrots, made into noodles

~ 100g – 200g rice noodles

*serves 2-3
