INGREDIENTS:

#1 Grandma’s Cookies

2 cups spelt flour (240g)
½ tsp salt
1 tsp baking powder
1 tsp cocoa powder, unsweetened
⅓ cup melted vegan butter (80ml)
3 tbsp banana, mashed (or unsweetened apple sauce)
¾ cup raw sugar (180g)
¼ cup non dairy milk (60ml)
⅓ cup chocolate chunks (50g), more if desired

→ yields ~ 12 big cookies

#2 Vegan Barnacle Loaf (BBQ Lentil Bean Loaf)

1 onion, diced
2 tsp oil for sautéeing
½ cup walnuts (75g)
1 can kidney beans rinsed and drained (240g)
½ cup + 2 tbsp oats (45g + 2 tbsp)
1 tbsp tomato purée
1 cup of brown lentils, cooked (80g)
2 tsp garlic powder
2 tsp smoked paprika
2 tbsp soy sauce
½ tsp salt

#3 The Kelp Milkshake

vegan whipped cream
2 frozen bananas
1 cup frozen pineapple (150g)
1-2 tsp spirulina powder, blue or green
1 ¼ cup non dairy milk (310ml), more if needed

#4 Vegan Pretty Patties

for the buns:

yellow:
3 cups spelt flour (360g)
1 ½ tsp salt
1 cup non dairy milk (250ml)
1 tbsp vegan butter
1 tbsp raw sugar
2 tsp dry active yeast
1 tsp turmeric + ½ tsp black pepper

green:
3 cups spelt flour (360g)
1 ½ tsp salt
1 cup non dairy milk (250ml)
1 tbsp vegan butter
1 tbsp raw sugar
2 tsp dry active yeast
1 tsp matcha or spinach powder → when using spinach powder feel free to add more to intensify the green color – more matcha is just gonna make it taste weirdly like grass, unless you like that flavour – then go for it 😉

pink:
3 cups spelt flour (360g)
1 ½ tsp salt
½ cup non dairy milk (125ml)
½ cup red beet juice (125ml)
1 tbsp vegan butter
1 tbsp raw sugar
2 tsp dry active yeast

→ yields 8 buns each

for the patties:

yellow:
1 can white beans (240g)
⅓ cup sunflower seeds (35g) or walnuts (45g)
1 onion, sautéed for 5-8 min
1 tsp garlic powder
2 tsp dried Italian herbs (I used a garlic herb mix in the video)
½ cup + 1 tbsp oats, rolled (65g)
2 tbsp soy sauce
1 tsp mustard
½ tsp turmeric + ½ tsp black pepper
salt to taste

green:
1 cup green peas, defrosted (150g)
½ cup chickpeas (120g)
juice of ½ lemon
2 tbsp nutritional yeast
1 onion, sautéed for 5-8 min
1 tsp garlic powder
2 tsp dried Italian herbs (I used a garlic herb mix in the video)
¾ cup oats, rolled (70g)
2 tbsp soy sauce
salt to taste
→ if too wet, add 1 tbsp of cornstarch and/or more oats

red:
1 can kidney beans (240g)
⅓ cup sunflower seeds (35g) or walnuts (45g)
1 onion, sautéed for 5-8 min
1 tsp garlic powder
2 tsp dried Italian herbs (I used a garlic herb mix in the video)
½ cup + 1 tbsp oats, rolled (65g)
2 tbsp soy sauce
1 tsp mustard
1 tbsp tomato purée
salt to taste

extra olive oil to fry off the burgers

→ makes 6-8 burgers, depending on the size

→ burger toppings, onion, tomato, lettuce pickles etc.
