#1 ‘Teriyaki’ Mushroom Summer Rolls

2 handfuls of mushrooms, cut into strips
1 tsp oil
a splash of soy sauce
1 tsp agave, raw sugar
1 tsp mirin, optional (forgot to mention)

100g rice noodles
1 carrot, cut into carrot noodles
parsley, or other greens
6-8 rice paper wrappers

#2 Cheesy Vegan Energy Bites

1 cup cashews, soaked in water overnight (150g)
3 tbsp small cut oats, more if needed
¼ cup almonds, raw (25g)
2 ½ tbsp nutritional yeast
2 tsp miso paste
⅓ tsp smoked paprika powder
¼ tsp garlic powder
1 tsp dried Italian Herbs
juice of ½ lemon
dried Italian herbs
1 tsp agave
¼ tsp sea salt

→ adjust spices if necessary

makes 10 – 15 balls depending on size

#3 Couscous Coconut Oatmeal – Mix

⅓ cup small cut oats (30g)
¼ cup couscous (40g)
a pinch of salt
¼ tsp vanilla, dried
2-3 tbsp dessicated coconut
enough hot water to cover the oats
