Vegan Meal Ideas for Lazy Days

Hi and welcome back to a new video!! This one features three lazy meal ideas – curry rice noodle bowls, a simple one pot pasta recipe and a tasty falafel salad.

#1 One Pot ‘Everything’ Spaghetti

1 onion
1-2 handfuls of mushrooms (i think the ones I used are called oyster mushrooms)
1-2 tsp olive oil
1 handful of cashews, whole
1 can kidney beans, drained and rinsed (240g)
1 can of tomatoes, chopped
2 cups vegetable broth (500ml)
if more liquid is needed add water (½ cup – 1 cup) (125ml – 250ml)
200g – 225g pasta, spaghetti or small cut (7-8 oz)
1-2 cups baby spinach
2 tbsp nutritional yeast, more if desired
salt and pepper to taste
2 tsp dried Italian herbs
seasoned salt to taste, or any other seasosing you prefer

→ 2-3 servings

#2 Lazy Spinach Falafel Salad

1 can chickpeas, rinsed and drained (240g)
1 red onion, quartered
1 clove of garlic
1 tsp tahini
juice of ½ lemon
⅓ cup oats (30g)
1 – 2 handfuls of spinach
salt, pepper to taste
1 tbsp soy sauce
1 tbsp oil for frying

hummus dressing ( 1 heaping tbsp hummus + 1 tbsp lemon juice)
a handful of sunflower seeds, chopped tomatoes, cucumber and avocado

→ 2-3 servings

#3 Quick Chickpea Curry Rice Noodles

1 tsp coconut oil (or a couple tbsp of water)
1 onion, chopped
1-2 tsp thai curry paste
1 can coconut milk, light or full fat (400ml) – (i used half the amount so that works too)
cornstarch slurry (3 tbsp water, 1 tbsp cornstarch)
½ cup veggie broth (125ml)
salt, pepper to taste
½ cup – 1 cup chickpeas (120g – 240g)

200g rice noodles (7 oz)

→ serve with lemon juice and peanuts
→ 2-3 servings
