Recreating Foods from the Show ‘YOU’

This video features vegan chocolate chip rolls for two, mini plain glazed donuts, a tastier version of celery Juice and extremely fluffy berry muffins.

#1 Plain Glazed Donut Bites

125g spelt flour (1 cup)
⅓ tsp salt
¼ cup warm non dairy milk (60ml)
2 ½ tbsp aquafaba
1 ½ tbsp raw sugar
1 tsp vanilla
¾ tsp dry active yeast

1 tsp vegetable oil for your hands
+extra flour for the surface

about 2 cups of frying oil (~500ml)

for the glaze:

60g powdered sugar (½ cup)
1 Tbsp maple syrup (can be skipped, sub with any other syrup or 1 tsp water)
½ tsp vanilla OR maple extract
2 1/4 tsp water

*makes about 12 donut bites
*fry in 2-3 batches

#2 Celery, Apple and Pineapple Juice

1 celery
2 apples
1 tbsp fresh lemon juice
1- 2 handfuls of greens
1-2 handfuls of frozen pineapple

*yields about 2 servings

#3 Chocolate Chip Rolls for Two

1 cup + 1 tbsp flour (150g)
⅓ tsp salt
1 tsp vanilla
3 ½ tbsp aquafaba
3 tbsp raw sugar
⅓ cup + 1 tsp non dairy milk (80 ml + 1 tsp)
2 tsp dry active yeast
2 tbsp melted vegan butter + more for later
more flour for the surface
¼ cup chocolate chips (50g), more if desired

*roll into something like a 15cm x 25cm ‘rectangle’
*once rolled, before you slice it into 4 pieces, it should be about 20cm long
*recently I made this recipe putting the rolls all in one small round casserole dish (around 20cm diameter) so you can do that do, that way they took around 25 minutes in the oven total, so maybe after the 18 min mark check up on them, possibly add some aluminum foil on top so they don’t get too dark at the topped and continue baking for a few more minutes

*yields 4 rolls

#4 Berry Muffins

250g + 1 tbsp spelt flour (2 cups + 1 tbsp)
150g powdered sugar
2 tsp baking powder
½ tsp salt
200ml non dairy milk (¾ cup + 1 tbsp)
1 tbsp applesauce, unsweetened
2 tsp vanilla
1 tsp apple cider vinegar
90 ml vegetable oil or melted vegan butter (⅓ cup + 2 tsp)
3 tbsp aquafaba (chickpea water)

a handful of strawberries, fresh or frozen, cut into bite sized pieces

*yields 11 muffins
