My Go To Vegan Breakfast Ideas!

It’s time for a good old fashioned vegan breakfast video! Today I am sharing with you my go to favorite meal ideas for the morning including my recipe for extremely fluffy pancakes.

#1 Fluffy Vegan Pancakes

dry ingredients

1/2 cup + 1 Tbsp spelt or all purpose flour (75g)
1 tsp baking powder
1-2 Tbsp raw sugar
¼ tsp salt

wet ingredients

1/3 cup plant milk (80ml)
1 tsp apple cider vinegar or 1 tbsp lemon juice
3 Tbsp unsweetened applesauce or mashed banana
1 tsp vanilla (optional)
2 Tbsp plant milk (for better consistency, if needed)

*I prefer mixing wet and dry separately, but it’s not necessary

*serves 1 big stack of pancakes or 2 small ones

#2 Berry & Chocolate Müsli Mix

2 cups oats, rolled (180g)
1 cup quick oats (90g)
1 tsp vanilla sugar ½ tsp powdered vanilla
1- 2 cup berries, dried or sub with raisins (100 – 200g)
2-3 tbsp chia seeds
1 cup crunchy granola or healthy cereal (100g)
⅓ cup vegan chocolate chips or cocoa nibs (55g)
more or less, preference
optional: extra nuts and seeds

#3 Red Bean Breakfast Bites

1 can red kidney beans (420g)
1 onion, roughly chopped
¼ cup sunflower seeds walnuts, (30g)
1 tbsp soy sauce
1 tsp mustard
1 tbsp lemon juice
1 tsp maple syrup
a handful of parsley, fresh or frozen
½ cup + 1 tbsp oats (65g)
salt, pepper to taste
1-2 tsp oil for frying

serve with avocado, hummus, toast, cucumber, tomatoes etc.

#4 Raspberry Chocolate Smoothie Bowl

~ 1 cup frozen raspberries or strawberries (~150g)
1 banana
2 tbsp unsweetened cocoa, more to taste
1 tbsp chia seeds
1/2 cup vanilla non dairy milk (125ml) , more if needed
3-5 soft dates
