Today afternoon there was another strong earthquake of 6,2 R again. We were in the middle of buying some material for the shelter inside the shop. But we could get out and saw some wall from shops fell down.We are safe and could get back to the camp with all the stuffs for the Refugees here.At the same time the first rain came, fortunately it was not so long and no wind.With those simple tents, there will be not easy for these people.PS: A little bit counts! INGREDIENTS
#1 Caramelized Onion & Smoked Tofu Sandwich
4 pieces of bread or 2 buns
2-3 yellow onions
1 tsp olive or coconut oil
1 avocado + juice of ½ lemon
½ block of smoked tofu, firm (100g) (3,5oz)
salt, pepper to taste
2 tbsp hummus
a sprinkle of nutritional yeast
a handful of lettuce
pickles
→ serves 2
#2 BBQ Tempeh Sandwich
1 block of plain tempeh
1 cup plain unsweetened vegan yogurt (250ml) (I recommend the alpro protein one or the plain ones by provamel)
1-2 tbsp bbq sauce
juice ½ lemon
¼ tsp smoked paprika powder
1 tsp soy sauce
1 clove of garlic, cut into quarters
1-2 tsp oil for brushing the pan
for the sandwiches
bread of choice
avocado
sprouts
pieces of red onion
the rest of the marinate
→ makes enough for 4 sandwiches!
#3 Single Serving Cinnamon + Almond and Apple Toasts
bread of choice
1 ½ tbsp vegan cream cheese, plain
a squeeze of lemon juice
1-2 tsp sweetener of choice (to taste really)
a dash of cinnamon
a splash of non dairy milk
almond butter
extra sweetener or cinnamon
apple slices
#4 Vegan Grilled Cheese Sauce Sandwiches
4 pieces of toast
1-2 tsp vegan butter, optional
for the sauce:
⅓ cup potato, raw, cut into cubes (50g)
⅓ cup cashews, raw (45g)
⅓ cup non dairy milk, unsweetened (80ml)
1 tbsp lemon juice
1 tbsp nutritional yeast
a pinch of salt (~¼ tsp)
1 heaping tsp Mugi Miso paste
