INGREDIENTS

#1 Eggos

1 cup + 2 Tbsp spelt flour (125g + 2 Tbsp)
2 tsp baking powder
1 Tbsp cornstarch
4 Tbsp raw sugar
⅓ tsp turmeric
¼ tsp kala namak / sub for reg salt but be prepared for eggless taste

⅔ cup vanilla plant milk (160ml) (or reg plant milk + ½ tsp vanilla)
¼ cup applesauce (60ml)
2 tsp apple cider vinegar

2 tbsp agave, if it needs to be sweeter

coconut oil and vegan butter for greasing and serving
agave or maple syrup or whatever else you wanna serve them with

→ makes 3 large waffles (so 12 waffle quarters)

#2 Murray’s Breakfast aka chickpea eggs + fried rice

Chickpea Omelette:

⅓ cup chickpea flour (30g)
3 tsp nutritional yeast
3 tbsp aquafaba aka chickpea water
¼ cup non dairy milk (60ml)
¼ cup + 1 Tbsp sparkling water (60ml + 1 tbsp) *or sub with reg water
1 tsp apple cider vinegar
¼ tsp kala namak or reg salt, but once again no egg flavour then
¼ tsp smoked paprika
pepper to taste

*1 -2 tsp vegan butter or coconut oil or vegetable oil to fry the omelette in
*serve as an omlette or break it apart like in the video

→ serves 1

Simple Fried Rice:

1 onion, finely minced + 1 tsp oil for sauteing
1 tbsp tomato purée, optional
~ 1 cup cooked brown rice (200g)

chickpea mix:

1 ½ tbsp chickpea flour
1 tbsp aquafaba
1 tbsp nutritional yeast
3 tbsp sparkling water
1 tsp apple cider vinegar
¼ tsp kala namak

spices of choice
vegan worcestershire sauce or soy sauce to taste

#3 El’s Hamburger

1 big onion, cut into small pieces
1 clove of garlic, finely minced
1 tsp oil for frying that onion and garlic
1 block of firm tofu (200g = 7 oz)
2 tsp tahini, white
¼ cup small cut oats (23g)
1 ½ cornstarch
2 tsp mustard
1 tbsp ketchup
1 tbsp soy sauce or vegan worcestershire sauce
salt, pepper to taste
⅓ tsp smoked paprika

1 tbsp frying oil
→ makes 4 – 5 small to medium sized burger patties

burger buns, ketchup, mustard, pickles, fried onion

#4 Real Vegan Vanilla Ice Cream

liquid 1 in the pot:

1 ½ cup non dairy milk (375ml)
1 cup vegan cream (250ml)
2 ½ tsp vanilla
2 tbsp coconut oil solid
2 tbsp vegan butter, solid
¼ cup maple syrup or agave (60ml)

liquid 2:

5 tbsp cornstarch
½ cup non dairy milk (125ml)
a generous pinch of salt
