#1 Nutty White Bean Dip aka Almost Vegan Cream Cheese

¼ cup almonds, whole (25g)
¼ cup cashews, whole (30g)
1 can white beans, drained
2 tbsp vegan yogurt, plain
a handful of fresh parsley + more greens/herbs if you like
juice of ½ lemon
black pepper
salt to taste (I used ⅓ tsp)

→ serves 4

#2 Frozen Peanut Butter + Cocoa Granola Bites

½ cup dates, soaked in water (100g) – deglet nour type ones
2 heaping tbsp peanut butter
1 ½ cups oats (135g)
2 tbsp cacao, unsweetened
1/3 cup nuts (30g, using walnuts)
a handful of chocolate chips, dried fruit or whole nuts (filling)
1 ½ tbsp flax
a pinch of salt
1 – 2 tbsp non dairy milk

→ makes 8-12 ‘bars’


1 green apple
1 frozen banana
1 handful baby spinach
1 cup water, cold (250ml)
2-3 kiwis
1-3 dates, if needed

→ yields 1 or 2 small smoothies

#3 Vanilla Sweet Potato Morning Bread:

150g spelt flour (1 cup + 2 tbsp)
50g whole wheat flour (⅓ cup + 1 tbsp)
2 tsp baking powder
a pinch of salt
2 tsp vanilla
¾ cup cup sweet potato, cooked (~150g)
¼ cup vegan butter, melted (60ml)
1 cup ¼ non dairy milk (310ml)
½ cup raw sugar (100g)
juice ½ lemon

toppings of choice

→ yields 1 loaf pan (mine was 20cm long – 25cm or 30cm should work as well. Once the bread has a golden brown crust, and when sticking a knife through it, it comes out relatively clean – you’ll know it’s done ~ 45 min – 55 min. → let it cool off and then let it sit in the fridge for a while before cutting it.

#4 Basic Overnight Oat Mix + Hot Berry Topping

½ cup quick oats (45g)
1 tsp chia seeds
1 tbsp sweetener of choice
⅓ cup non dairy milk (80ml)

Berry Topping:
⅓ cup frozen raspberries (50g) + a splash of water
3-4 tbsp plain vegan yogurt
1 tbsp almond butter
1 handful blueberries
