how to pop amaranth: I created this recipe keeping in mind that teenagers and women need a calcium rich low calorie meal which also is filling. Amaranth is very high in protein, fibre, iron, calcium and other vitamins and minerals. It was the food of the Aztec’s and now considered as a superfood. Amaranth or Rajgira is a winter food.
3 tbsp amaranth seeds will give 1/2 cup popped amaranth. You can also buy popped amaranth online.
1 cup low fat curd
1 medium pomegranate seeds
1/4 – 1/2 cup popped amaranth
have this as a breakfast, lunch, or dinner.
