Lazy Vegan Snack Ideas!

Guys – I’m back with vegan snacks! This video features 4-5 easy and simple to make plant based recipes – healthy, tasty and not that much work required – perfect for busy and lazy days 🙂

#1 Nutty Chocolate Crumble Mix

½ cup nuts [I used roasted hazelnuts] (50g)
½ cup oats (45g)
1 tbsp flax seeds
a pinch of salt
2 tbsp cocoa powder, unsweetened
1 tbsp non dairy milk [ I used oat milk ] – if needed
½ cup dates (~ 6 – 7 dates)

→ serves 4 as a snack
→ add it to muesli, vegan yogurt, use it to top off your smoothies or eat straight away

#2 Super Simple ‘Cheesy’ Broccoli Snack

1 small head of broccoli
1-2 tbsp hummus
the juice of ½ lemon
nutritional yeast

#3 Crispy Roasted White Beans

1 can white beans, rinsed and drained
2 tbsp nutritional yeast
½ tsp smoked paprika
1 tsp Italian seasoning
¼ tsp salt, more if needed
1 tsp raw sugar, agave, maple sugar etc
1 tsp olive oil

→ serves 3-4 as a snack
→ eat right away, since they lose their crunch ones cooled off completely

#4 Vanilla Mug Cake

1-2 tsp coconut oil, solid
¼ tsp vanilla
3 tbsp non dairy milk
½ tsp apple cider vinegar
1 tbsp sugar*
a pinch of salt
¼ tsp baking powder
3 ½ tbsp spelt or all purpose flour

*I used maple sugar, you can substitute with raw or coconut sugar. I’ve never tried using a liquid sweetener before. If you try it, maybe use 1 tbsp less plant milk and see how you get on. Let me know if it works!

serves 1 or 2 for sharing
