INGREDIENTS:

#1 Mini Vegan Scones

2 1/4 cups spelt flour 270g)
¼ cup raw sugar (60g)
½ tsp salt
1 tsp baking powder
½ cup non dairy milk (125ml)
4 tbsp cold vegan butter, cut into cubes (60g) (2,12 oz)

→ makes about 10 little scones

For the cashew cream:

1 cup cashews, soaked in water overnight (150g)
a pinch of salt
juice of ½ lemon
3 tbsp plain vegan yogurt

→ use half for the scones and half for the toasts
→ add 1-2 tbsp raw sugar to half of the mixture (more or less if desired)

#2 Lazy Vegan Croissants

1 can of canned croissants

#3 Tomato Basil Open Faced Sandwiches

Tomato Basil Spread

half of the cashew cream mix, about ½ cup
3 tbsp ready made tomato sauce
1-2 handfuls of fresh basil
salt, pepper to taste if needed

serve with bread, rice cakes, crackers, raw veggies etc

#4 Roasted Veggie Platter

Leftover veggies to roast:

1-2 bell peppers
1-2 onions
a handful of cherry tomatoes
zucchini
celery
pumpkin, sweet potato etc
carrots, parsnips

1 tbsp olive oil
salt, pepper, garlic powder to taste

1 carrot, raw, cut into strips using a vegetable peeler
1 avocado
hummus dressing: 1-2 tbsp plain hummus, juice of ½ lemon
a handful of chickpeas
nutritional yeast

#5 Mini Cherry Banana Smoothie Bowls

3 frozen bananas, cut into chunks before freezing
2 cups cherries, frozen (300g)
1 ½ – 2 cups vanilla non dairy milk (depended on your desired consistency)
1-3 soft dates, optional

→ toppings of choice (add right before serving)
1-2 vegan cookies, crumbled up (i used the one by the brand veganz)
blueberries
almonds

→ serves 4

#6 Cherry Banana Juice

half cherry juice
half banana nectar
→ served cold!

#7 Turmeric Hot Chocolate

for 1 cup you’ll need:

½ tsp turmeric powder
a dash of black pepper
¼ tsp cinnamon
2 tsp cocoa, unsweetened
1 tsp sweetener of choice
a pinch of salt
1 cup non dairy milk (250ml)

→ multiply by how many cups you need
