Cozy Vegan Breakfast Ideas for Chill Mornings

Today I want to share 4 simple yet delicious breakfast ideas. Perfect for cozy winter mornings: vegan waffles, winter-y overnight oats, an apple pie smoothie and a vegan tofu omelette!

#1 Spiced Overnight Oats

½ cup small cut oats (45g)
1 tsp chia seeds (or flax seeds)
1 tbsp ground almonds
1 tbsp roasted hazelnuts (or other nuts)
1 tsp cinnamon
1-2 tsp sweetener
a pinch of salt
⅓ cup non dairy milk (80ml)
⅓ cup non dairy yogurt, plain (80ml)
½ tsp orange zest, ½ tsp lemon zest (optional but recommended!)
a handful of dried fruit, chopped (optional)

#2 Banana and Peanut Butter Waffles

1 banana
½ cup spelt flour (60g)
½ cup oats (45g)
2 tsp baking powder
1 tsp vanilla
2 tbsp sweetener of choice (maple syrup, raw sugar etc.)
¼ tsp salt
1 tbsp peanut butter
1 cup non dairy milk (250ml)

→ makes 4 – 6 waffles

#3 Apple Pie Smoothie

½ apple sauce (125ml)
1 apple
1-3 soft dates
1 tsp cinnamon
¼ tsp gingerbread spice or pumpkin pie spice
2 tbsp oats
1-2 tsp plum jam
1 frozen banana OR ½ cup frozen mango
1 cup non dairy milk (250ml)

*serves 1

#4 Tofu Omelette

1 onion
1 big block of firm tofu (300g) (10.6 oz)
2 tbsp nutritional yeast
1 ½ tbsp flour
2 tbsp cornstarch
1 tsp kala namak (black salt)
1 tsp turmeric
¼ tsp salt
¼ tsp black pepper
1 tbsp fresh lemon juice
½ cup non dairy milk (125ml)

2 tsp olive oil for frying, more if needed

→ serves 3
